Matcha
In Matsue City, Shimane Prefecture, Matsudaira Fumai, the lord of the Matsue Domain, established a school of tea ceremony called "Fumai-ryu" in the mid-Edo period, making matcha more accessible and popular among common people. Even today, a culture of enjoying matcha casually, like sencha or hojicha, without being bound by strict formalities, is still deeply rooted.
